This divine recipe will become a favorite, making its way to your regular baking rotation.

Preparation Time: 15 minutes
Cooking Time: 20 minutes
Total Time: 35 minutes
Yield: Approximately 40 pieces

Ingredients

  • 2 1/2 cups granulated sugar
  • 1/2 cup light corn syrup
  • 1/2 cup water
  • 1/4 teaspoon salt
  • 2 teaspoons vanilla extract
  • 1 cup pecans, chopped (optional)
  • 1/2 cup maraschino cherries, chopped (optional)

Instructions

  1. Prepare the Ingredients: Begin by gathering all your ingredients. Ensure the pecans and cherries, if using, are chopped and ready to be added later in the process.

  2. Combine Syrup Mixture: In a 2-quart saucepan, combine the granulated sugar, light corn syrup, water, and salt. Place the saucepan over medium heat. Stir gently to dissolve the sugar, but be careful not to over-stir, as this can affect the texture of the candy.

  3. Cook to Hardball Stage: Allow the syrup mixture to cook undisturbed until it reaches the hardball stage, which is 260 degrees Fahrenheit on a candy thermometer. Stir occasionally to ensure even cooking. The syrup will thicken and become a clear, golden color as it reaches the desired temperature.

  4. Beat Egg Whites: While the syrup is cooking, start beating the egg whites in a large mixing bowl. Use an electric mixer to beat the egg whites until stiff peaks form. This will take a few minutes, so be patient. Stiff peaks should hold their shape when the beaters are lifted from the bowl.

  5. Incorporate Syrup into Egg Whites: Once the syrup reaches 260 degrees, carefully and very gradually pour the hot syrup into the beaten egg whites. It’s crucial to do this slowly and steadily to avoid cooking the egg whites. Continue beating the mixture on high speed with an electric mixer as you add the syrup.

  6. Add Vanilla: After all the syrup is incorporated, add the vanilla extract to the mixture. Continue to beat the candy mixture for about 4-5 minutes, or until it thickens and holds its shape.

  7. Add Nuts or Cherries (Optional): If desired, fold in the chopped pecans or cherries into the mixture. This step adds an extra layer of texture and flavor to your divinity candy.

  8. Shape the Candy: Working quickly, use a teaspoon to drop spoonfuls of the candy mixture onto sheets of waxed paper. Swirl the top of each piece with the back of the spoon to create a decorative touch.

  9. Cool and Enjoy: Allow the divinity candy to cool completely at room temperature. The candy will set and harden as it cools. Once fully cooled, store in an airtight container.
