Ingredients:
- Beef: 1/4 kg, thinly sliced
- Cabbage: 1/2 head, roughly chopped
- Spring Onions: 2 stalks, roughly chopped
- Coconut Milk: 1 packet (Kara brand)
For the Spice Paste:
- Shallots: 7 cloves
- Garlic: 4 cloves
- Candlenuts: 3
- Coriander Seeds: 1 teaspoon
- Turmeric: 1 finger-sized piece
- Red Chilies: 6
Additional Ingredients:
- Sweet Soy Sauce: 1 tablespoon
- Salt: 1 teaspoon
- Sugar: 1 teaspoon
- Seasoning Powder: 1 packet (Ladaku brand)
- Galangal: 2 slices, bruised
- Lemongrass: 1 stalk, bruised
- Bird’s Eye Chilies: 10-15 (adjust to taste)
- Ginger: 1 finger-sized piece, bruised

Prepare the Beef: Begin by thinly slicing the beef. Boil it first until it’s somewhat tender, adding the bruised ginger piece during the cooking. Make sure to keep the broth; it will be used later.

Cook the Spice Paste: In a pan, heat some oil and sauté the spice paste ingredients—shallots, garlic, candlenuts, coriander seeds, turmeric, and red chilies—along with the bruised galangal and lemongrass. Cook until the mixture turns golden brown and releases a fragrant aroma.

Combine Ingredients: Add the boiled beef to the pan, stirring to coat it with the spice mixture. Gradually incorporate the beef broth you saved earlier, mixing well.

Season the Dish: Stir in the seasoning powder, salt, sugar, and sweet soy sauce. Pour in the coconut milk and continue to stir, making sure not to let the coconut milk curdle.

Simmer: Allow the mixture to simmer until the beef is tender and the flavors meld together. Adjust the seasoning to taste, adding more seasoning powder if needed.

Finish and Serve: Once the beef is tender and the flavors are well-developed, turn off the heat. Your savory Tongseng daging sapi is ready to be served.
