Instructions

  1. Prepare the Tofu:
    Begin by washing the soft tofu thoroughly, then cut it into desired shapes. Lightly fry the tofu in a pan until just golden, being careful not to overcook, as you want it to hold its shape during boiling.

  2. Make the Spice Paste:
    In a food processor or mortar, blend the shallots, garlic, red chili peppers, and bird’s eye chili peppers until you achieve a smooth paste. Set this mixture aside.

  3. Cook the Base:
    In a pot, bring 1 ½ cups of water (or broth) to a boil. Add the prepared spice paste to the boiling liquid. Season with salt, sugar, chili powder, and bouillon powder, stirring well to combine the flavors.

  4. Add the Vegetables:
    Next, add the chopped napa cabbage and bean sprouts to the pot, followed by the fried tofu. Gently stir to incorporate everything.

  5. Incorporate the Egg:
    Crack the egg into the stew, stirring gently until it breaks and mixes in, or leave it whole if you prefer a poached style. Cook until the egg is set to your liking.

  6. Finish with Garnishes:
    Once cooked, remove the pot from the heat. Squeeze fresh lime juice over the top, and sprinkle with chopped green onions for a fresh finish.

  7. Serve:
