Instructions

  1. Prepare the Batter:
    Begin by sifting the gram flour (besan) into a mixing bowl. Add salt, a pinch of orange color, and ghee. Mix well to combine all the ingredients.

  2. Make the Batter Consistency:
    Gradually add water to the mixture, stirring continuously until you achieve a batter similar in consistency to that used for making dosa.

  3. Fry the Boondi:
    Heat oil in a deep frying pan. Before making the boondi, add a pinch of cooking soda to the batter and mix well. Once the oil is hot, use a ladle with small holes to drop the batter into the oil. Fry until the boondi turns golden brown, then remove and place it on a kitchen towel to absorb excess oil. Continue this process until all the batter is used.

  4. Prepare the Sweet Syrup:
    In another saucepan, combine 1/4 cup of water and 1/2 cup of sugar. Heat this mixture until it reaches a one-string consistency. Once ready, add a pinch of orange color and turn off the heat.

  5. Combine the Ingredients:
    Allow the fried boondi to cool slightly, then grind it coarsely in a mixer. In a mixing bowl, combine the crushed boondi with almonds, melon seeds, salt, rose water, cardamom powder, saffron, and ghee. Mix thoroughly.

  6. Add the Sugar Syrup:
    Gradually pour in the sugar syrup while mixing the boondi mixture. Ensure everything is well combined. Cover the mixture and let it rest for 15 to 20 minutes.

  7. Mold the Modaks:
    After resting, mix the ingredients with your hands to combine everything well. Take a modak mold, grease it lightly with ghee, and fill it with the boondi mixture. Press firmly to shape it.

  8. Set and Serve:
    Refrigerate the modaks for a short while to help them set. Once they are firm, carefully remove them from the mold and serve.
