Cooking Instructions

  1. Heat the Oil:
Start by heating oil in a kadhai (wok) over medium heat.

  2. Add Whole Spices:
Once the oil is hot, add cumin seeds, mustard seeds, bay leaf, dried red chili, black cardamom, green cardamom, and asafoetida. Sauté the spices for about 15 seconds until they release their aroma.

  3. Cook the Onions:
Add the finely chopped onions to the kadhai. Sauté until they turn translucent and soft, which should take about 3-4 minutes.

  4. Add Ginger and Garlic:
Incorporate the ginger and garlic paste into the mixture. Cook for an additional 2 minutes, stirring continuously to prevent burning.

  5. Mix in Tomatoes:
Now, add the chopped tomatoes along with the tomato purée. Cover the kadhai and let it cook for 3-4 minutes until the tomatoes soften and meld into the mixture.

  6. Spice it Up:
Sprinkle in the red chili powder, turmeric powder, coriander powder, garam masala, and salt. Stir well to combine all the spices with the onion-tomato mixture and let it cook for another 5 minutes.

  7. Add Paneer and Water:
After 5 minutes, add the crumbled paneer and a little water to achieve your desired gravy consistency. Mix everything together and let it simmer for 6-8 minutes.

  8. Finish with Peas:
Finally, fold in the boiled and mashed green peas, combine gently, cover, and let it cook for another 3-5 minutes.

  9. Garnish and Serve:
Once cooked, turn off the heat and garnish your Paneer Bhurji Gravy with freshly chopped coriander. Serve hot with spinach raita and tawa parathas for a delightful dinner experience.
