  1. Popping the Rajgira:
    Begin by popping the rajgira seeds. In a kadai or heavy-bottomed pan, heat it on low flame. Add 2-3 tablespoons of rajgira at a time. You will notice the seeds start popping almost immediately. Keep stirring gently and remove the popped seeds onto a plate as they finish popping. Repeat this process until all the rajgira are popped and set aside.

  2. Soaking Saffron:
    In a small bowl, add the saffron threads to 2 tablespoons of warm milk. Allow this mixture to sit for about 10 minutes to infuse the flavors.

  3. Cooking the Kheer:
    In a heavy-bottomed pan, pour in the 1 liter of milk and bring it to a boil over medium heat. Once the milk reaches a near-boiling point, gently add the popped rajgira. Stir occasionally to ensure it doesn’t stick to the bottom of the pan.

  4. Simmering:
    Continue to cook the mixture for about 10 minutes or until the rajgira become tender. Then, add in the chopped almonds, cashew nuts, raisins, cardamom powder, and the soaked saffron along with the milk. Let the kheer simmer for an additional 5 minutes, allowing all the flavors to meld beautifully.

  5. Final Touches:
    Once done, switch off the heat and garnish the kheer with chopped pistachios and rose petals for a touch of elegance.
