Herb-Crusted Plaice Roll-Ups Recipe

Category: Main Course
Servings: 4

Ingredients:

Ingredient Quantity
Plaice fillets 400g
Breadcrumbs 120g
Garlic 1 clove
Fresh parsley To taste
Fresh basil 3 leaves
Eggs 2
Whole milk 1 tablespoon
Butter 80g
Salt To taste
Black pepper To taste
Mayonnaise 100g
Low-fat yogurt 2 tablespoons
Salted capers 1 tablespoon

Instructions:

  1. Prepare the breadcrumbs mixture:
Begin by making the breadcrumb coating for the plaice roll-ups. In a mixing bowl, combine the breadcrumbs, garlic (crushed), finely chopped parsley, salt, pepper, and chopped basil leaves. Stir to mix well and set aside.

  2. Prepare the plaice fillets:
Cut the plaice fillets in half lengthwise. Spread a little of the breadcrumb mixture on each fillet, then drizzle a small amount of olive oil over the top.

  3. Roll up the fillets:
Roll up each fillet tightly with the breadcrumb mixture inside. Repeat this process for all the fillets.

  4. Prepare the egg wash:
In a shallow dish, crack the eggs and add the milk. Season with salt and pepper, then whisk everything together until well-combined.

  5. Coat the roll-ups:
Dip each plaice roll-up into the egg wash, ensuring they are fully coated. Place the coated roll-ups in a separate dish to set aside.

  6. Cook the plaice roll-ups:
Heat the butter in a large skillet over medium heat. Once melted and bubbling, carefully place the plaice roll-ups in the pan. Cook on all sides for about 3-4 minutes per side, or until golden and crispy on the outside and cooked through inside.

  7. Prepare the sauce:
In a small bowl, mix together the mayonnaise and yogurt. Add the salted capers, previously rinsed to remove excess salt, and stir until the sauce is smooth.

  8. Serve:
Once the plaice roll-ups are cooked, serve them on a platter alongside the creamy caper sauce for dipping. The delicate flavor of the fish pairs beautifully with the creamy, tangy sauce.

Cooking Tips:

  • For extra flavor, feel free to add a squeeze of lemon juice to the caper sauce for a fresh, zesty kick.
  • If you prefer a lighter version, you can substitute the butter with olive oil for a healthier option.

Enjoy your delicious herb-crusted plaice roll-ups with a side of fresh vegetables or a light salad for a satisfying and balanced meal!
