Roast Crispy Chicken Recipe 🍗
Description: This simple roast produces a crispy skin and juicy meat with a slight hint of herbs. Goes great with all the traditional chicken side dishes.

Instructions:

Prepare the Brine:
- Boil onions and salt in 1 quart of water for 20 minutes.
- Allow the brine to cool and pour it into a pot large enough to hold all the chickens.
- Add the chicken and enough cold water to cover. Note: DO NOT PUT THE CHICKEN IN WARM OR HOT BRINE.

- Cover the pot and refrigerate for 24 hours. This step ensures the chicken absorbs the flavors and becomes tender.

Preheat the Oven:
- Before roasting, preheat your oven to 350°F (175°C).

Prepare the Chicken:
- Drain the chicken from the brine and pat it dry using paper towels. Remove any contents of the spice packet if included.

Season:
- If desired, rub the chicken with cloves of garlic or any additional herbs and spices for extra flavor.

Roast:
- Place the chicken on a roasting rack in a baking dish, breast side up.
- Roast the chicken, uncovered, in the preheated oven for 60-80 minutes, depending on the weight. Ensure the internal temperature reaches 165°F (75°C) at the thickest part of the meat.

- Once done, remove the chicken from the oven and let it rest for 10-15 minutes before carving. This allows the juices to redistribute, resulting in tender and moist meat.
