Roast Crispy Chicken Recipe 🍗

Description: This simple roast produces a crispy skin and juicy meat with a slight hint of herbs. Goes great with all the traditional chicken side dishes.

Ingredients:

3 – 5 fryer chickens
1 salt
2 onions
1 quart water
2 – 3 cloves garlic (optional)

Instructions:

  1. Prepare the Brine:

    • Boil onions and salt in 1 quart of water for 20 minutes.
    • Allow the brine to cool and pour it into a pot large enough to hold all the chickens.
    • Add the chicken and enough cold water to cover. Note: DO NOT PUT THE CHICKEN IN WARM OR HOT BRINE.
  2. Marinate:

    • Cover the pot and refrigerate for 24 hours. This step ensures the chicken absorbs the flavors and becomes tender.
  3. Preheat the Oven:

    • Before roasting, preheat your oven to 350°F (175°C).
  4. Prepare the Chicken:

    • Drain the chicken from the brine and pat it dry using paper towels. Remove any contents of the spice packet if included.
  5. Season:

    • If desired, rub the chicken with cloves of garlic or any additional herbs and spices for extra flavor.
  6. Roast:

    • Place the chicken on a roasting rack in a baking dish, breast side up.
    • Roast the chicken, uncovered, in the preheated oven for 60-80 minutes, depending on the weight. Ensure the internal temperature reaches 165°F (75°C) at the thickest part of the meat.
  7. Rest and Serve:

    • Once done, remove the chicken from the oven and let it rest for 10-15 minutes before carving. This allows the juices to redistribute, resulting in tender and moist meat.
  8. Serve:

    • Carve the chicken and serve it with your favorite side dishes such as roasted vegetables, mashed potatoes, or a fresh salad.
