Fish Croquettes with Ricotta and Herbs

Instructions

  1. Prepare the Plaice: Begin by bringing a pot of water to a boil. Once boiling, add the plaice fillets and cook them until tender. Then, remove the fillets and place them on a cutting board. Finely chop the fish fillets using a sharp knife.

  2. Strain the Fish: Place the chopped fish in a fine mesh sieve to remove excess moisture, ensuring a better texture for your croquettes.

  3. Prepare the Herbs: Wash and chop your mixed herbs (such as spinach, chard, or other suitable greens). Also, finely chop the chives and add them to the mixture for a delightful flavor boost.

  4. Mix the Ingredients: In a large bowl, combine the chopped plaice fillets, ricotta cheese, mixed herbs, chives, and 40g of breadcrumbs. Add salt to taste and mix everything well until the mixture is smooth and cohesive.

  5. Shape the Croquettes: Take small portions of the mixture, about 15g each, and roll them into small balls. Place them on a tray, ready for the next step.

  6. Coat the Croquettes: Gently roll each croquette in the remaining 20g of breadcrumbs to give them a crisp coating.

  7. Cook the Herbs: Heat some extra virgin olive oil in a pan over medium heat and add the peeled garlic cloves, gently frying them for a few moments to infuse the oil. Add the chopped mixed herbs and cover the pan. Cook the herbs until they are wilted, about 3-4 minutes. Once done, turn off the heat and keep the herbs warm.

  8. Cook the Croquettes: In a separate frying pan, heat more olive oil over medium heat. Add the croquettes to the pan, being careful not to overcrowd them. Fry the croquettes for about 4-5 minutes, turning them occasionally to ensure even cooking and a golden brown exterior.

  9. Serve: Once the croquettes are crispy and golden, remove them from the pan and set them aside. To plate, arrange the cooked herbs on a serving dish and gently place the croquettes on top.
