Roast Pork Loin with Tomato Jam

Instructions

Preparing the Pork Loin:

  1. Prepare the Pork Loin
    Start by obtaining a pork loin that is already tied, wrapped in pancetta, and studded with a sprig of rosemary. If not, you can take a regular pork loin, wrap it with thin slices of pancetta, and tie it with kitchen twine, making sure to add a sprig of rosemary as well.

  2. Season the Pork Loin
    Season the pork with salt and black pepper, massaging the spices into the meat to enhance the flavor.

  3. Prepare the Zucchini
    Rinse and trim the ends of the baby zucchini.

  4. Cook the Pork Loin
    In a large skillet, heat some olive oil with two cloves of peeled garlic. Once hot, add the pork loin to the pan and sear it on all sides until it’s golden brown.

  5. Cook the Zucchini
    Once the pork is seared, add the baby zucchini into the skillet with the pork drippings. Pour in 30g of water, salt the zucchini, and sauté them for about 1 minute. Turn off the heat, remove the garlic, and set the zucchini aside.

  6. Roast the Pork
    Preheat your oven to 170°C (340°F) in static mode. Transfer the pork to the oven and roast for approximately 60-70 minutes. For optimal doneness, use a meat thermometer to check the internal temperature, which should reach 68°C (155°F).

Making the Tomato Jam:

  1. Prepare the Tomatoes and Onion
    While the pork is roasting, wash and halve the cherry tomatoes. Peel and slice the red onion.

  2. Cook the Tomato Jam
    In a saucepan, combine the halved cherry tomatoes and sliced red onion. Add sugar and white wine vinegar. Cook over low heat, stirring occasionally, until the tomatoes soften and the mixture becomes syrupy.

  3. Finish the Jam
    Let the tomato mixture simmer until it reaches a jam-like consistency, ensuring it is thick but not completely dry. This should take around 20 minutes.

Serving:

  1. Rest the Pork Loin
    Once the pork has finished cooking, remove it from the oven. Let it rest for a few minutes before slicing.

  2. Slice and Serve
    Remove the twine and rosemary sprig from the roast. Slice the pork loin into even pieces. Arrange it on a platter and serve with the sautéed zucchini and a generous helping of the homemade tomato jam.

  3. Garnish and Enjoy
    Finish the dish by sprinkling fresh thyme over the pork for a fragrant touch. Serve this dish hot and enjoy the delightful combination of flavors.
