Instructions
To make the aromatic steamed meatballs, begin by finely chopping the aromatic herbs. Use a knife to chop the chives, and then transfer them to a food processor. In a separate pan, sauté the spring onions with a ladle of vegetable broth until softened.

Next, take a large pot with a steaming basket, adding the water along with the bay leaves, black peppercorns, and the leftover stalks from the spring onions.
In a mixing bowl, beat the eggs and season with salt and black pepper. In another bowl, combine the ground veal with the crushed garlic, sautéed spring onions (once they’ve cooled slightly), and the beaten eggs. Mix everything thoroughly until the mixture is smooth and firm.
Once the meat mixture is ready, stir in the chopped herbs: chives, parsley, thyme, marjoram, and wild fennel. These fresh herbs will infuse the meatballs with rich flavor.
Now, form small, uniform meatballs from the mixture, ensuring they are approximately the same size. Bring the water in the steaming pot to a boil, and then carefully place the meatballs into the steaming basket.
Cover and steam the meatballs for about 20–25 minutes, or until they are fully cooked. If you prefer, you can also bake the meatballs in the oven. To do so, place them in an oiled baking dish and cook at 180°C (350°F) for 30 minutes in a conventional oven, or at 160°C (320°F) for 25 minutes in a fan-assisted oven.
Once the meatballs are cooked through, serve them hot, accompanied by a fresh salad of lamb’s lettuce if desired. These aromatic steamed meatballs are a perfect, light appetizer, bursting with the flavors of fresh herbs.
