Instructions
Step 1: Prepare the Herb Marinade for the Turkey

Begin by preparing the herb mixture for marinating the turkey. On a chopping board, finely chop the thyme, marjoram, and rosemary. Zest one-half of a lemon and squeeze the juice out of the same lemon. Set these ingredients aside.
Step 2: Prepare the Turkey
Take the turkey breast and trim off any excess fat or cartilage. Place the cleaned turkey breast into a sufficiently sized baking dish. Sprinkle the top side of the turkey with half of the chopped herbs, half of the lemon zest, and press the garlic through a garlic press or finely mince it. Season with salt and freshly ground black pepper to taste.
Step 3: Marinate the Turkey
Flip the turkey breast onto the other side and sprinkle with basil leaves, roughly torn by hand. Drizzle with lemon juice. Cover the baking dish with plastic wrap and allow the turkey to marinate in the fridge for at least 1 hour.
Step 4: Cook the Turkey
After marinating, preheat the oven to 180°C (350°F). Drizzle the bottom of a baking tray with extra virgin olive oil. Place the marinated turkey into the baking tray, pouring the marinade over the top. Cover the tray with aluminum foil and bake for about 1 hour, or until the turkey is fully cooked and tender.
Step 5: Prepare the Exotic Salad
While the turkey is cooking, prepare the exotic salad. Slice the spring onion into thin rounds and soak them in a bowl of cold water and salt for about 30 minutes. This step helps to soften the sharp flavor of the raw onion and makes it more digestible.
Step 6: Make the Salad Dressing
In a small bowl, mix together the Greek yogurt, Dijon mustard, and mayonnaise to form a smooth and creamy dressing. Set aside.
Step 7: Prepare the Mango and Avocado
Peel the mango, remove the pit, and cut the flesh into small cubes. Repeat the same for the avocado: cut it in half, remove the pit, and dice the flesh into cubes. Squeeze the remaining lemon juice over the diced mango and avocado to prevent browning.

Drain the soaked spring onion slices and add them to the bowl with mango and avocado. Toss gently to combine. Pour the prepared dressing over the salad and mix until everything is coated. Leave a little dressing aside to garnish the turkey slices later.
Step 9: Serve the Dish
Once the turkey is cooked, slice it into thin pieces and arrange on a serving plate. Spoon some of the exotic salad onto the plate next to the turkey. Drizzle the reserved dressing over the turkey slices for extra flavor.
