Instructions:

  1. Preheat and Prep:

    • Gently loosen the skin covering the breast of the turkey, being careful not to tear it.
    • Spread the herb mixture under the skin and over it.
  4. Roasting:

    • Place the prepared turkey on the rack in the roasting pan.
    • Roast the turkey, basting every 20 minutes or so. If the bird starts to brown too quickly, loosely cover it with tin foil.
    • The turkey is cooked when a meat thermometer inserted into the thickest part of the thigh reaches 180°F (82°C), approximately 5 1/2 hours.
  5. Rest and Carve:

    • Remove the turkey from the roaster and let it stand for 25 minutes.
    • Remove all stuffing from the bird before carving and serving.
    • Leftover turkey and stuffing can be frozen separately for future use.
