- Note: If using a foil roasting pan, ensure it’s placed securely on a solid tray for support.
- Remove the neck and giblets from the cavity of the turkey. Rinse the turkey thoroughly inside and out, then pat it dry with a paper towel.
-
Season and Stuff:
- Sprinkle salt and pepper inside the turkey and over its skin.
- Stuff the bird with your preferred dressing just before cooking, both in the neck and body cavities.
- Secure the neck flap with a skewer or stitch it. Tie the drumsticks together and close the body cavity securely.
-
Herb Butter Mixture:
- In a small bowl, combine butter, rosemary, sage, and thyme. Mix well.
- Gently loosen the skin covering the breast of the turkey, being careful not to tear it.
- Spread the herb mixture under the skin and over it.
-
Roasting:
- Place the prepared turkey on the rack in the roasting pan.
- Roast the turkey, basting every 20 minutes or so. If the bird starts to brown too quickly, loosely cover it with tin foil.
- The turkey is cooked when a meat thermometer inserted into the thickest part of the thigh reaches 180°F (82°C), approximately 5 1/2 hours.
-
Rest and Carve:
- Remove the turkey from the roaster and let it stand for 25 minutes.
- Remove all stuffing from the bird before carving and serving.
- Leftover turkey and stuffing can be frozen separately for future use.
