Developed over 25 years ago, this recipe combines the richness of Parmesan and sharp cheddar cheese with the subtle flavors of herbs for an absolutely great biscuit.

Ingredients:

  • 2 cups cake-and-pastry flour
  • 3/4 cup all-purpose flour
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons baking soda
  • 1/2 teaspoon black pepper
  • 1/4 cup butter
  • 1/4 cup Parmesan cheese, grated
  • 1/3 cup sharp cheddar cheese, shredded
  • 1/2 cup buttermilk
  • Olive oil (for greasing)

Instructions:

  1. Preheat oven: Preheat your oven to 425°F (220°C).

  2. Grease baking sheet: Lightly grease an oven baking sheet with olive oil.

  3. Mix dry ingredients: In a large mixing bowl, combine both flours, baking powder, salt, baking soda, and black pepper. Stir with a fork until well mixed.

  4. Incorporate butter: Cut in the butter using a pastry blender or a fork until the mixture resembles coarse crumbs.

  5. Add cheese: Stir in the grated Parmesan cheese and shredded sharp cheddar cheese.

  9. Cut out biscuits: Using a 1 1/2 inch cookie cutter, punch out the dough. Place the cut-out biscuits on the greased cookie sheet about 1/2 inch apart.

  10. Re-roll scraps: Gather up the scraps of dough, re-roll them, and cut out the remaining biscuits. Place them on the prepared baking sheet.

  11. Bake: Bake in the preheated oven for 12 to 15 minutes or until golden brown.

  13. Optional: If you prefer bite-size biscuits, you can use a 1 1/4 inch cutter or make your own using the top of a spray can. Simply cut part of the top off for easier cleaning. When cutting, dip the cutter into flour each time to prevent sticking.
