Ingredients:

  • 8 large mushrooms
  • 1 cup vegetable broth
  • 1 clove garlic, minced
  • 3 tablespoons breadcrumbs

  • 1 tablespoon lemon juice

Instructions:

1. Preheat your oven to 375°F (190°C).
2. Clean the mushrooms thoroughly and remove the stems. Set aside the mushroom caps. Chop the stems finely.
3. In a nonstick pan, heat a little oil or vegetable broth over medium heat. Add the chopped mushroom stems and sauté until they release their moisture, about 3-4 minutes.
4. Add the minced garlic to the pan and sauté for another 1-2 minutes until fragrant.
5. Stir in the breadcrumbs, ensuring they’re evenly coated with the mushroom mixture. If needed, add a little more oil or broth to moisten the mixture.
6. Toss in the chopped basil and sauté briefly until wilted, about 1 minute. Remove the pan from heat.
7. Take each mushroom cap and spoon a generous amount of the sautéed mixture into each one, pressing down lightly to compact the stuffing.
8. Place the stuffed mushrooms on a baking sheet lined with parchment paper. Cover them with another piece of parchment paper to prevent them from drying out while baking.
9. Bake in the preheated oven for 20 minutes, or until the mushrooms are tender and the stuffing is golden brown on top.
10. Once done, remove the stuffed mushrooms from the oven. Sprinkle them with freshly squeezed lemon juice and a pinch of pepper to taste.
