Description:
This Grilled Mushroom Sandwich is a quick and delicious option for breakfast, brunch, supper, or even lunch boxes. The finely chopped mushrooms, spiced with green chilies and enhanced with fresh coriander, offer a healthy and satisfying meal. Ideal for a weekend breakfast or as a tasty snack.
Ingredients:
- 8 slices Whole Wheat Brown Bread
- 400 grams Button Mushrooms, chopped
- 2 Green Chilies, finely chopped
- Salt and Pepper, to taste
- Small bunch Coriander (Dhania) Leaves, finely chopped
- Salted Butter, as required
- Extra Virgin Olive Oil, for cooking

Instructions:
- Begin by heating a teaspoon of olive oil in a wok or heavy-bottomed pan on medium heat. Add the chopped mushrooms and sauté until all the moisture has evaporated (mushrooms release water during cooking).
- Once the moisture has evaporated, add the chopped green chilies, salt, and black pepper. Sauté for another 2-3 minutes until well combined. Turn off the heat and stir in the fresh coriander leaves. Set the mushroom mixture aside.
- Spread butter on both slices of bread. On one slice, add about 2 tablespoons of the mushroom mixture, then cover with the other slice of bread.
- Grill the sandwich using a Panini press or sandwich maker until golden brown. Alternatively, toast the sandwich on a tawa (griddle) over low-medium heat. Place a heavy plate on top of the sandwich to ensure the filling stays inside. Flip the sandwich once the first side is toasted and cook the other side until crispy and golden.
- Serve the Grilled Mushroom Sandwich warm, perfect for breakfast or packed in lunch boxes. It pairs well with Carrot Pineapple Orange Juice or Homemade Eggless Vanilla Custard (Pudding).
