Instructions:

  1. In an 8- or 9-inch flameproof heavy skillet, heat olive oil over moderately low heat. Add chopped onions and minced garlic, stirring occasionally, until they soften and become fragrant.

  2. Meanwhile, in a mixing bowl, whisk together the eggs, fresh thyme leaves, chopped rosemary, and black pepper according to your taste preferences.

  3. Pour the egg mixture into the skillet with the cooked onions and garlic. Allow it to cook without stirring for about 2 minutes until the edges start to set.

  4. While the frittata is cooking, preheat your broiler to ensure it’s ready for the next step.

  5. Add diced ham to the frittata mixture in the skillet. Continue cooking without stirring for about 8 minutes, or until the edges are set but the center remains slightly soft.

  6. Sprinkle the shredded extra-sharp cheddar cheese evenly over the top of the frittata. Place the skillet under the broiler, positioned about 4 inches from the heat source. Broil for approximately 1 minute, or until the cheese is melted and bubbling.

  7. Carefully remove the skillet from the broiler. Sprinkle freshly chopped parsley over the top of the frittata for a burst of fresh flavor.

  8. Using a sharp knife, cut the frittata into wedges and serve immediately, either hot or at room temperature, as desired.
