Green Chillies 2, finely chopped
Garlic 2-3 cloves, finely chopped
Onion 1, finely sliced
Coriander (Dhania) Leaves 4 sprigs, finely chopped
Tomato 1, finely sliced
Red Chilli Powder 2 teaspoons
Garam Masala Powder 2 teaspoons
Turmeric Powder (Haldi) 1/2 teaspoon
Roasted Tomato Pasta Sauce 4 tablespoons
English Mustard Sauce 4 tablespoons
Salt To taste

Instructions:

  1. Prepare the Spinach Paratha Dough:

    • Begin by preparing all the ingredients and setting them aside. Puree the spinach leaves along with the green chili in a blender and set aside.
    • In a large mixing bowl, combine the whole wheat flour, pureed spinach, cumin powder, and salt. Gradually knead the mixture into a smooth dough. If the dough is too dry, add a little water as needed.
    • Once the dough comes together, add a teaspoon of oil and knead well to make a soft, pliable dough. Divide the dough into 4 equal portions.
  2. Cook the Palak Parathas:

    • Heat a skillet over medium heat. Roll each portion of dough into a round disc of about 8 inches in diameter, dusting with flour as necessary.
    • Place the rolled paratha on the hot skillet. Cook the paratha on one side until it starts to puff up, then flip it over.
    • Drizzle a small amount of ghee or oil over the top of the paratha and cook the other side until golden brown and crisp with light brown spots. Repeat the process with the remaining dough portions. Stack the cooked parathas and set aside.
  3. Prepare the Paneer Bhurji Filling:

    • To make the filling, heat a little oil in a pan over medium heat. Add the finely chopped garlic and green chilies, sautéing until fragrant.
    • Add the finely sliced onion and cook until it becomes soft and translucent.
    • Stir in the chopped tomato, coriander leaves, and cook until the tomatoes soften.
    • Next, add the crumbled paneer (cottage cheese) along with red chili powder, garam masala, and turmeric powder. Mix well to combine.
    • Add roasted tomato pasta sauce and English mustard sauce. Stir everything together, adjusting salt and spices to taste. Cook for a few more minutes until the mixture becomes a cohesive, flavorful filling.
  4. Assemble the Kathi Roll:

    • Place one cooked palak paratha on a clean surface. Spread a tablespoon of the roasted tomato pasta sauce on the surface of the paratha.
    • Spoon the prepared paneer bhurji mixture onto the paratha, ensuring it is evenly spread across the center.
    • Carefully roll the paratha around the filling to form a tight wrap.
  5. Serve and Enjoy:
