Step 1: Prepare the Dough
To begin making the palak paneer paratha dough, take 2 cups of whole wheat flour in a large bowl. Add a pinch of salt and a teaspoon of oil. Gradually add water, a little at a time, and knead the dough until it becomes soft, smooth, and pliable. Cover the dough with a damp cloth and let it rest for about 20 minutes.
Step 2: Prepare the Stuffing
While the dough is resting, prepare the stuffing. In a separate bowl, crumble or grate the homemade paneer and set it aside. In a pan, heat a little oil and sauté the finely chopped spinach leaves (palak) until they shrink down and release excess moisture. Allow the spinach to cool slightly.
