Achari Masala Powder
Achari Masala Powder is a flavorful and aromatic spice mix that can be prepared in advance and stored for later use. This versatile masala, made with a combination of fenugreek seeds, fennel seeds, cumin seeds, mustard seeds, coriander seeds, kalonji, and dried red chilies, can be used to create a variety of North Indian dishes, such as Achari Paneer or Achari Bhindi.

Ingredients:
- 2 tbsp Coriander Seeds
- 1 tsp Fenugreek Seeds
- 1 tsp Mustard Seeds
- 1 tsp Kalonji (Nigella Seeds)
- 1 tsp Cumin Seeds
- 1 tsp Fennel Seeds
- 4 Dried Red Chilies

Instructions:
- Heat a pan on medium heat and dry roast the coriander seeds, fenugreek seeds, mustard seeds, kalonji, cumin seeds, fennel seeds, and dried red chilies. Roast the spices for about 2-3 minutes, until they become fragrant.
- Turn off the heat and let the roasted spices cool down to room temperature.
- Once cooled, transfer the spices to a mixer grinder and grind them into a fine powder.
- Store the Achari Masala Powder in an airtight container. It will stay fresh for up to one month.
- Use this masala to prepare delicious dishes like Achari Paneer or Achari Bhindi whenever you like.
