Instructions:

Begin by sanitizing your jars to ensure that they are clean and sterile. This is important for preserving the chutney for long-term storage. Once cleaned, set them aside.

Peel and thinly slice the yellow onions. Set them aside for later use.

Peel the fresh ginger and slice it into thin strips.

Next, take the coriander seeds and cloves and grind them together in a mortar and pestle until they form a fine spice powder.

In a large, heavy-bottomed pot, add the sliced onions, the ground spice powder, raisins, and salt. Stir everything together to combine evenly.

After an hour of mixing, pour in the white wine vinegar and lower the heat to a gentle simmer. Let the mixture cook on a low flame for an additional hour.

As the chutney cooks, it will thicken and become more concentrated, resembling the consistency of a jam or marmalade.

Once the chutney has reached the desired consistency (thick and jam-like), remove it from the heat. At this point, you can either serve it immediately after cooling or store it for later use.

To store, carefully transfer the hot chutney into the sanitized jars you prepared earlier. Seal the jars with their lids while still warm.

Invert the jars and allow them to cool completely. This will create a vacuum seal as the jars cool, preserving the chutney for longer storage.

After the jars have cooled, check the lids. Press down on the center of each lidโif it does not pop back (creating a โclick-clackโ sound), the vacuum seal has been successfully formed.

Once sealed, let the chutney sit for at least a month to allow the flavors to mature and develop fully. The chutney can be enjoyed after this resting period or kept in storage for months.
