Instructions

  1. Sanitize the Jars: Begin by sanitizing your jars. Follow the steps recommended by the manufacturer or boil them to ensure they are clean and ready for use.

  2. Prepare the Oranges:
    Peel the oranges, ensuring to remove the skin. Next, slice the peel of one orange into thin strips. Place the strips in a small saucepan, add water, and bring to a boil. Let them simmer for about 2 minutes before draining and setting aside.

  3. Extract the Orange Segments:
    Carefully cut the oranges into segments, ensuring to preserve the juice. Collect any juice that escapes during this process in a bowl for later use.

  4. Juice the Tangerines:
    Squeeze all of the mandarins, and strain the juice to remove seeds and pulp. Pour the juice into a large saucepan.

  5. Mix the Ingredients:
    Add the sugar, cinnamon sticks, and the seeds from the vanilla bean pod (discard the pod itself) into the saucepan with the tangerine juice. Stir the mixture well.

  6. Cook the Marmalade:
    Place the saucepan over medium heat. Stir frequently and bring the mixture to a boil. After about 35 minutes, use a kitchen thermometer to check the temperature. The marmalade is ready when it reaches 108°C (226°F).

  7. Jar the Marmalade:
    Once the marmalade has reached the correct temperature, remove the saucepan from the heat and discard the cinnamon sticks. Using a funnel, pour the hot marmalade into the sanitized jars. Be sure to leave a little space at the top of the jar to allow for expansion.

  8. Seal and Store:
    Immediately screw the lids onto the jars tightly. Allow them to cool at room temperature. Once cooled, store the marmalade in a cool, dark place. It should keep for several months.
