Instructions for Biryani Masala Powder

  1. Roast the Spices
Start by heating a flat griddle or pan over medium heat. Begin by roasting the coriander seeds and black peppercorns for about 10 seconds, stirring occasionally to avoid burning.

  2. Add the Other Spices
Next, add the cumin seeds, jeera, cloves, and cinnamon stick to the pan. Continue to roast for another 10 seconds, allowing the spices to release their essential oils and fragrance.

  3. Roast Remaining Spices
Add the remaining spices—cardamom pods, black cardamom, mace, stone flower, star anise, and nutmeg powder—into the pan. Roast them all together for about 1 minute, making sure they do not burn, as this will affect the flavor.

  4. Cool and Grind
Once the spices are roasted, remove the pan from the heat and let them cool completely. After cooling, grind the mixture into a smooth powder using a spice grinder or mortar and pestle.

  5. Store and Use
Transfer the freshly ground Biryani Masala Powder into a clean mason jar. Seal the jar and store it in a cool, dry place. The spice mix can be kept fresh for up to a month, making it a convenient ingredient to have on hand for your biryani preparations.
