Instructions:

  1. Prepare the Melon:

    • Start by slicing the melon into pieces. Carefully remove the seeds and peel, then cut the flesh into cubes. You will need approximately 340g of melon flesh for the recipe.
  2. Maceration:

    • Place the melon cubes into a large bowl. Pour the pure alcohol over the melon, making sure it’s fully submerged. Cover the bowl with plastic wrap and let it macerate in a cool, dark place for several days.
  3. Infuse the Milk:

    • In a small saucepan, combine the whole milk and sugar. Split the vanilla bean lengthwise, scrape the seeds out, and add both the seeds and the pod into the saucepan.
    • Heat the mixture over medium heat, stirring occasionally, until the sugar has fully dissolved. Once dissolved, remove the pan from the heat and allow the milk to cool completely.
  4. Filter the Melon Mixture:

    • After the maceration period (usually around 5 days), strain the melon mixture through a fine mesh strainer, pressing down with a spatula or marisa to extract as much liquid as possible. You’ll be left with a melon-infused alcohol base.
  5. Combine Liquids:

    • Now, take the filtered melon alcohol and combine it with the milk mixture you prepared earlier. Stir everything together well to ensure the flavors meld together.
  6. Bottle and Freeze:

    • Transfer the final mixture into a clean, airtight bottle. Seal it tightly and place it in the freezer. For the best flavor, allow the Meloncello to rest in the freezer for 7 to 10 days before serving.
  7. Serve:
