Instructions

To begin preparing this delightful peach jam, first, select ripe peaches with firm flesh. Wash them thoroughly under running water. Then, peel the peaches carefully and cut them into 2 cm chunks. Place the peach pieces into a large pot.

Squeeze the juice from one lemon and add it to the peaches. Stir gently to mix the ingredients together. Allow the fruit and lemon juice to macerate for a while, letting the flavors meld.

After the maceration period, set the pot over medium heat. Stir occasionally using a spatula to prevent the jam from sticking to the bottom of the pot. If needed, skim off any foam that forms on top to ensure your jam remains clear and smooth.

Continue to simmer the peach mixture for approximately 40 minutes, until it reaches a temperature of 108°C (use a kitchen thermometer to measure the temperature accurately). Stir intermittently to avoid burning the mixture.

While the jam cooks, focus on sanitizing your jars and lids. Follow the health guidelines for proper sanitation to ensure your jars are clean and safe for storing the jam.

Once the jam has reached the desired consistency, it will be ready. Transfer it to a bowl to halt the cooking process. Fill your sterilized jars with the hot jam, leaving about 1 cm of space from the top to prevent overflow. Seal the jars tightly but without over-tightening the lids.

For an extra seal, you can flip the jars upside down as they cool, allowing the heat to form a vacuum seal. Once cool, your peach jam is ready to be enjoyed!
