While the jars are drying, wash and dry the pink grapefruits. Peel them carefully to remove both the outer skin and the white pith beneath. If you come across any seeds, remove them as well.

Cut the peeled grapefruit into segments and place them in a large bowl. Sprinkle the sugar over the grapefruit pieces and mix well. Let the mixture marinate for at least one hour, allowing the fruit to release its juices.

Meanwhile, take the peel of one of the grapefruits and scrape off any remaining bitter white pith. Cut the peel into thin strips.

Place the grapefruit peel in a small saucepan and cover with boiling water. Boil for about 1 minute to soften. Drain the water and set the peel aside.

After marinating the grapefruit and sugar mixture, you will notice that a good amount of liquid has been released. Pour the grapefruit and its juices into a heavy-bottomed pot. Add the thyme sprigs, removing the leaves from the stems.

Set the pot over medium-low heat and bring to a gentle simmer. Let it cook for approximately 40 minutes, stirring occasionally.

In the final 5 minutes of cooking, increase the heat to medium-high to allow any excess liquid to evaporate. Continue cooking until the mixture reaches a temperature of 108°C (226°F), which you can measure with a kitchen thermometer.

Once the jam has reached the desired temperature and consistency, carefully transfer it into your prepared, still-warm jars. Seal the jars tightly with their lids.
