Pirozhki (Stuffed Russian Buns)

Preparation Steps:

  1. Prepare the Dough:

    • Begin by melting the butter and allowing it to cool to room temperature.
    • In a separate bowl, dissolve the fresh yeast in warm milk, ensuring itโ€™s well-mixed.
    • In a large bowl, combine the Manitoba flour, sugar, egg, and the melted butter. Mix gently with your hands.
    • Slowly pour in the milk and yeast mixture, continuing to mix the dough until it begins to come together into a rough ball.
    • Knead the dough until smooth and elastic. This may take around 10 minutes.
    • Once smooth, place the dough into a lightly oiled bowl and cover it with plastic wrap. Allow it to rise in a warm, dry place for at least 3 hours or until doubled in size.
  2. Prepare the Filling:

    • While the dough is rising, prepare the onion filling.
    • Peel and slice the red onions into thin rings.
    • Heat a drizzle of extra virgin olive oil in a pan over medium heat. Add the onions and sautรฉ until softened and lightly golden.
    • Season with salt and black pepper to taste. Stir well to combine, then set aside to cool.
    • Once the onions have cooled, transfer them to the refrigerator to keep chilled until needed.
  3. Form the Pirozhki:

    • When the dough has doubled in size, transfer it to a lightly floured work surface. Divide the dough into 7 equal portions (approximately 140g each).
    • Roll each portion into a smooth ball.
    • Take one dough ball and flatten it into a small round disc. Place a spoonful of the onion filling in the center.
    • Carefully fold the dough over the filling to enclose it, pinching the edges to seal tightly. Repeat this process for all the portions of dough.
  4. Bake the Pirozhki:

    • Line a baking sheet with parchment paper and place the filled dough balls (pirozhki) onto the sheet, leaving space between them.
    • Beat the egg yolk with a little bit of whole milk to create an egg wash. Brush this mixture over the top of each pirozhok for a beautiful golden finish.
    • Preheat the oven to 200ยฐC (392ยฐF), and bake the pirozhki on the middle rack for about 20 minutes or until golden brown.
  5. Serve:

    • Once the pirozhki are baked, remove them from the oven and let them cool slightly before serving.
