  2. Macerating the Strawberries:
    Place the prepared strawberries into a large stainless steel pot. Add the sugar and the lemon juice. The lemon juice not only adds flavor but also helps in the setting process, enhancing the overall texture of the jam.

  3. Let the Fruit Macerate:
    Leave the strawberries to macerate for a while. This allows the fruit to release its juices, creating a natural syrup. After this time, the strawberries will be softened and ready for the next step.

  4. Cook the Jam:
    Once the fruit has macerated, put the pot on the stove and bring it to a boil over medium heat. Stir occasionally with a spatula to prevent sticking. As it heats up, the mixture will begin to foam. If necessary, skim the foam off the top to achieve a smoother consistency. Keep an eye on the temperature with a kitchen thermometer, and once the jam reaches 108°C (226°F), it’s time to remove it from the heat.

  5. Jar the Jam:
    Carefully transfer the hot jam into sterilized jars. Leave about 1 centimeter of space from the top of each jar. Secure the lids tightly, but be careful not to over-tighten.

  6. Create a Vacuum Seal:
    The heat from the jam will create a vacuum seal as the jars cool. To ensure the vacuum has formed, press down gently on the center of each lid. If it doesn’t make the usual “click” sound, the jar has sealed properly.

  7. Cool & Store:
    Allow the jars to cool at room temperature. Once they have cooled, check the seal. If the jar has sealed correctly, it’s ready to be stored. Your homemade strawberry jam can be kept in a cool, dark place for long-lasting freshness.
