Preparation Steps:
To make delicious syrup-soaked peaches, begin by sterilizing your jars and lids according to the health guidelines provided by the Ministry of Health (details at the bottom of this recipe). Start by washing your jars thoroughly under running water. Next, place them in a pot, cover them with water, and bring it to a boil. Once the water reaches a rolling boil, reduce the heat and continue boiling for 20 minutes. Afterward, add the lids and boil for an additional 10 minutes. Turn off the heat and let the jars cool down. Then, carefully place the jars on a dry towel to finish drying.
While the jars are cooling, prepare the peaches. Wash them thoroughly, then place a large pot of water on the stove and bring it to a boil. Once boiling, gently blanch the peaches for about 2 minutes. Afterward, remove the skins from the peaches by peeling them carefully.
Once peeled, pack the peaches into the sterilized jars, leaving about 1.5 cm of space from the top of the jar.
Now, it’s time to prepare the syrup. In a separate pot, pour in the water and heat gently over low heat. Stir with a spatula to dissolve the sugar completely, then bring the mixture to a boil for about 2-3 minutes.
Carefully pour the syrup over the peaches in the jars, ensuring the peaches are fully covered. To help compress the peaches slightly but without packing them too tightly, place a small weight (or a piece of parchment paper) over the top. This ensures the peaches remain submerged in the syrup.
Next, it’s time to pasteurize the jars. Boil the jars in a water bath as described in the Ministry of Health’s guidelines (details at the bottom). This step is crucial for ensuring the preserves stay safe and last.
Once the jars are sealed, allow them to cool down. To check if the vacuum seal has been achieved correctly, press gently in the center of the lid. If you don’t hear the classic “click-clack” sound, your jars have sealed properly.
