Instructions

Preparation

  1. Prepare the Papaya: Wash the raw papaya thoroughly. Peel the skin, remove the seeds, and chop it finely into small cubes.

  2. Blanching: Bring a pot of water to a boil. Add the chopped papaya and blanch for 3 minutes, then turn off the heat. Let the papaya soak in the hot water for an additional 5 minutes to soften slightly.

  3. Drain the Papaya: After soaking, drain the papaya pieces thoroughly. Set aside.


Cooking the Sugar Syrup

  1. Dissolve Sugar: In a medium saucepan, combine 300 grams of sugar with 2 cups of water. Heat on medium, stirring until the sugar fully dissolves.

  2. Add Papaya to Syrup: Once the sugar has dissolved, add the papaya cubes to the syrup. Let it cook until the syrup reaches a one-thread consistency and becomes thick and glossy. At this stage, the papaya should be cooked through, becoming translucent and absorbing some syrup.

  3. Flavor the Syrup: Turn off the heat and add 1 teaspoon of vanilla extract for a subtle flavor boost. Stir in the saffron for natural color. If you prefer more vibrant colors, divide the papaya-syrup mixture into separate bowls and add food coloring as desired.


Soaking & Coloring

  1. Allow Absorption: Let the colored papaya pieces sit in the syrup for 16-24 hours, stirring occasionally for even color distribution. Cover the bowls and set them aside.

  2. Drain the Syrup: After the soaking period, remove the papaya pieces and place them on a wire rack to drain excess syrup. Make sure to position a plate underneath to catch any drips.


Drying

  1. Air Drying Process: To remove stickiness, leave the papaya pieces on the wire rack for 2-3 days until they’re fully dried. For a quicker drying process, place the tray under direct sunlight, adjusting for your local temperature and humidity.

  2. Storage: Once dried, store your homemade Tutti Frutti in an airtight container at room temperature.
