Instructions

  1. Prepare the Stale Bread:
    Begin by cutting the stale bread into small cubes. Place them in a bowl and soak them with the milk, allowing the bread to absorb the liquid and soften.

  2. Cook the Liver Mixture:
    Finely chop the onion and sauté it in a pan with the butter over low heat until it softens. Add the veal liver, cut into small pieces, and the finely chopped lard. Cook for about 5-10 minutes, until the liver is fully cooked.

  3. Blend the Liver and Onion:
    Once the liver is cooked, use a food processor or a hand blender to mash the liver, lard, and onions into a smooth mixture. This will help combine the flavors and create a cohesive texture for the dough.

  4. Combine Ingredients:
    Add the liver mixture to the soaked bread, then incorporate the egg, parsley, lemon zest, marjoram, salt, and black pepper. Mix everything together thoroughly to form a dense and uniform dough.

  5. Chill the Dough:
    Cover the mixture and refrigerate for about 2 hours to allow it to firm up. This resting time will help the flavors meld together and make the dough easier to handle.

  6. Shape the Canederli:
    After the dough has rested, wet your hands with a little water and shape the mixture into large balls, about the size of a tangerine. This will create the traditional round shape for the canederli.

  7. Cook the Canederli:
    Bring the beef broth to a boil in a large pot. Carefully drop the canederli into the simmering broth, one at a time. Cook them for about 5 minutes, ensuring they are fully cooked through but still soft.

  8. Serve:
    Once cooked, carefully remove the canederli from the broth. In each serving bowl, ladle two scoops of hot broth and place two canederli in each bowl. Serve immediately, allowing the hearty flavors to shine through.
