Instructions:

  1. Prepare the Vegetables: Begin by thoroughly washing and peeling the vegetables. First, take the carrots and peel them. Trim the ends, then cut them into fairly thick chunks.

  2. Prepare the Tomatoes: Cut the roma tomatoes in half, making sure to remove any seeds if you prefer a smoother broth, though they can be left in for extra flavor.

  3. Cook the Broth: Place all the chopped vegetables, including the carrots, celery, onions, and tomatoes, into a large pot. Add the black peppercorns and a pinch of salt, adjusting the quantity to suit your taste.

  4. Simmer: Fill the pot with 2 liters of water, ensuring all the ingredients are submerged. Bring the mixture to a boil over medium-high heat. Once boiling, lower the heat slightly, allowing the broth to simmer gently for about an hour. This will give the flavors ample time to meld together.

  5. Season and Strain: After an hour of simmering, taste the broth and adjust the seasoning with more salt if needed. Once the broth is to your liking, remove it from the heat. Strain the broth through a fine mesh sieve or cheesecloth to separate the liquid from the vegetables, leaving you with a clear, flavorful vegetable broth.

  6. Serve or Store: The vegetable broth is now ready for use. You can either serve it immediately as a warm base for soups, risottos, or stews, or allow it to cool and store it in the fridge for up to 3-4 days. If you prefer a lighter broth, you can dilute it with additional water, but it’s rich enough to stand on its own in many recipes.
