Instructions:

Step 1: Prepare the Wonton Dough
Start by preparing the dough for the wonton wrappers. In a mixing bowl, combine the flour with a pinch of salt. Gradually add the water, mixing the ingredients together until you form a dough. Knead the dough with your hands, first inside the bowl and then on a clean surface, until the mixture is smooth, firm, and elastic. Cover the dough with plastic wrap and let it rest at room temperature for about 10 minutes.

Step 2: Prepare the Filling
While the dough rests, chop the green part of the spring onion. In a bowl, add the ground pork, rice wine, chopped spring onion, salt, and white pepper. Mix well with chopsticks or a spoon until the ingredients are thoroughly combined.

Step 3: Roll Out the Dough
Once the dough has rested, divide it into two portions. On a floured surface, roll out one portion using a rolling pin or pasta machine to a very thin sheet. Sprinkle with flour as you go to prevent sticking. Cut the dough into 8-10 cm squares.

Step 4: Form the Wontons
To assemble the wontons, place a square of dough on the palm of your hand. Spoon a small amount of the prepared filling into the center of the square. Fold the square over to form a triangle, pinching the edges tightly to seal the filling inside. Next, take the two corners of the triangle and bring them together, overlapping them slightly. Wet the edges with a little water to ensure they stick together. Repeat until all the wontons are formed.

Step 5: Prepare the Broth
While you’re shaping the wontons, prepare the broth directly in your serving bowls. In each bowl, add a pinch of salt and white pepper. Slice the romaine lettuce into thin strips and place it in each bowl. This adds a lovely texture and freshness to the soup.

Step 6: Cook the Wontons
Carefully drop the wontons into boiling water or a lightly salted broth. Cook for about 3-5 minutes, or until the wontons float to the surface and the dough is tender.

Step 7: Serve and Garnish
Once the wontons are cooked, carefully transfer them to the prepared bowls with the lettuce. Drizzle each serving with sesame oil and soy sauce for a rich and aromatic finish. Garnish with additional sliced spring onions if desired.
