Instructions:
-
Cook the Farro:
Begin by bringing a large pot of salted water to a boil. Add the pearled farro and cook according to package instructions until tender. Drain and set aside. -
Prepare the Chicken:
While the farro is cooking, season the chicken breasts with salt, pepper, and thyme. Heat a grill pan over medium-high heat and cook the chicken for about 4-5 minutes on each side, ensuring that it is cooked through and the surface is nicely charred. Once done, drizzle the honey over the chicken and let it rest for a few minutes before slicing it into thin strips. -
Make the Basil Pesto:
In a tall, narrow container, combine the fresh basil leaves, 70g of extra virgin olive oil, grated lemon zest, salt, and black pepper. Use an immersion blender to blend everything into a smooth pesto. Once ready, transfer it to a small bowl, cover it with plastic wrap, and set aside to keep it fresh. -
Assemble the Dish:
To plate the warm farro, start by placing 2 tablespoons of farro at the base of each plate. Arrange 3-4 slices of honey-glazed chicken on top of the farro. -
Garnish and Serve:
For an extra touch of flavor, drizzle a little extra olive oil over the top, sprinkle with lemon zest, and finish with a pinch of Maldon sea salt flakes. Your warm farro with honey chicken is now ready to be served!
This delightful dish combines the nutty texture of farro with the sweet and savory flavors of honey-coated chicken, all brightened up by the fresh basil pesto and lemon zest. Perfect for a satisfying and flavorful main course. Enjoy!
