Instructions:

1. Preparing the Dough:
Start by placing the Type 1 flour in a large bowl. Add the salt and wildflower honey. Using your fingertips, gently mix the ingredients together to evenly distribute the honey and salt throughout the flour.

2. Adding Yeast and Forming the Dough:
Crumble the fresh yeast into the bowl with the flour mixture. Begin working the dough with your hands until everything is combined into a rough, shaggy texture. Gradually pour in the water and knead the dough until it becomes smooth and elastic, which may take about 5 to 7 minutes.

3. Incorporating Olive Oil:
Once the dough is smooth, add the tablespoon of olive oil to the mixture and knead again for a few minutes until the oil is fully incorporated into the dough. The dough should now feel soft and slightly tacky but should not stick to your hands.

4. First Proofing:
