Ingredients:

Dry Brewer’s Yeast 4g

Fine Salt 10g

Additional Honey 2 teaspoons
Coarse Salt to taste

Instructions:

  1. Prepare the Dough:
    In a large bowl, sift the Manitoba flour and mix it with the dry brewer’s yeast. Dissolve the fine salt in the water, then add the olive oil and honey into the bowl. Mix everything together using your hands, directly in the bowl, until the dough starts to come together.

  2. Knead the Dough:
    Transfer the mixture to a lightly floured work surface. Knead the dough by hand until it becomes smooth and elastic. Once it has reached the desired texture, shape it into a ball.

  3. First Proofing:
    Place the dough into a lightly oiled bowl. Cover it with plastic wrap and allow it to rise for about 2 hours. You can leave it in a turned-off oven with the light on or any warm, draft-free place to help it rise.

    After the dough has doubled in size, gently punch it down and turn it out onto an oiled work surface. Use your hands to flatten the dough into a rectangular shape. Cover it with plastic wrap and set it aside.

    Once the focaccia is baked, remove it from the oven. While it’s still warm, top it with slices of prosciutto crudo and drizzle with a final touch of honey for a balanced sweetness.
