Simple Honey Grilled Chicken with Happy Call by Febs
Ingredients:
- 4 whole chicken thighs (upper and lower parts)
- 1 lime or lemon
- Cucumber and other greens for serving

- 5 cloves garlic
- 5 shallots
- 3 candlenuts
- 2 tsp coriander seeds
- 2 slices ginger
- 2 slices galangal
- 6 cm turmeric

- Cooking oil
- 1 lemongrass, bruised
- 2 bay leaves
- 3 tbsp sweet soy sauce (kecap manis)
- 3 tbsp honey
- 2 tsp salt
Marinade:
- 1 tbsp margarine
- 2 tbsp honey
- 2 tbsp sweet soy sauce (kecap manis)
Instructions:

Rinse the chicken thoroughly and rub with lime or lemon juice. Refrigerate for about 15 minutes.

Blend all the ingredients for the spice paste until smooth.

Heat cooking oil in a pan over medium heat. Sauté the spice paste, lemongrass, and bay leaves until fragrant and the paste turns slightly yellow (avoid browning). Add a little water if needed.

Add the chicken pieces to the pan. Stir to coat the chicken evenly with the spices. Cook for about 20 minutes.

While waiting for the chicken to cook, prepare the marinade for grilling. Mix margarine, honey, and sweet soy sauce in a bowl. Add 3 tablespoons of the cooked chicken seasoning mixture to the marinade.

Grease a non-stick pan or Happy Call with margarine to prevent sticking. Grill the chicken, brushing both sides generously with the marinade mixture. Grill until cooked through.
