Honey-Grilled Gurame: A Delightful Indonesian Recipe

Ingredients:

  • 1 whole Gurame fish (or similar freshwater fish, cleaned and scaled)
  • 2 tablespoons lemon juice
  • Sugar (to taste)
  • Salt (to taste)
  • Kaffir lime leaves (a handful, torn)
  • Bay leaves (2-3)
  • 8 tablespoons honey

For the Spice Paste:

  • 8 shallots
  • 4 cloves garlic
  • 1 teaspoon coriander seeds

  • 1-inch piece galangal
  • 1-inch piece ginger
  • ½-inch piece turmeric
  • 4 candlenuts

For the Basting Sauce:

  • 2 tablespoons vegetable oil
  • 2 tablespoons sweet soy sauce (kecap manis)
  • 4 tablespoons honey

Instructions:

  1. Prepare the Spice Paste:

    • Begin by blending the shallots, garlic, coriander seeds, black pepper, galangal, ginger, turmeric, and candlenuts into a smooth paste.
  2. Cook the Spice Paste:

    • Heat a pan over medium heat and add a splash of oil. Sauté the spice paste along with the bay leaves and kaffir lime leaves until aromatic and the mixture darkens slightly.
    • Stir in sugar, salt, and honey to taste. Remove from heat and let the mixture cool.
