Ingredients:

  • 1 1/4 cups flour
  • 1/3 cup sugar
  • 1/2 cup butter
  • 2/3 cup sugar
  • 1/2 cup honey
  • 3 tablespoons all-purpose flour
  • 1/4 teaspoon salt
  • 2 eggs
  • 2 tablespoons butter
  • 2 teaspoons vanilla extract
  • 1 cup pecans

Instructions:

Step Description
1 Combine 1 1/4 cups flour and 1/3 cup sugar in a bowl; cut 1/2 cup butter into flour mixture with a pastry blender until mixture resembles coarse meal.
2 Press firmly and evenly into an ungreased 9×13 inch pan.
3 Bake at 375°F (190°C) for 10 to 15 minutes or until edges are lightly browned.
4 Meanwhile, in another bowl, combine 2/3 cup sugar, honey, 3 tablespoons flour, salt, eggs, 2 tablespoons butter, and vanilla extract. Mix well.
5 Pour the mixture over the prepared crust in the pan.
6 Bake at 375°F (190°C) for 20 to 25 minutes, shielding with foil the last 5 minutes, if necessary, to prevent excessive browning.
7 Allow the pie to cool on a wire rack.
8 Once cooled, cut into 1 1/2 x 1-inch bars.
9 Yield: Approximately 4 1/2 dozen finger pies.
