Instructions
- Prepare the base for the mini cakes: Begin by placing the Pavesini biscuits into a food processor. Pulse until you achieve a fine, homogenous mixture.
- Assemble the base layer: Take 10 small muffin liners (each with a diameter of 8.5 cm) and place about one tablespoon of the biscuit mixture into each. Use the back of a spoon to firmly press the crumbs down into the base. Once compacted, refrigerate the bases for at least 30 minutes to firm up.
- Tip: If you prefer, you can use a 22 cm round cake pan to create a single large cake instead of mini cakes.
- Prepare the walnut filling: While the base chills, chop the walnuts coarsely with a knife.
- Dissolve the gelatin: Soak the gelatin sheets in cold water until softened, then squeeze out excess water. Dissolve the softened gelatin in 60ml of lukewarm heavy cream. Stir well to ensure it’s fully dissolved.
- Make the cream filling: In a large bowl, combine the Greek yogurt and the prepared gelatin-cream mixture. Stir thoroughly until smooth. Add the honey and chopped walnuts, mixing until everything is well incorporated and the mixture is smooth and creamy.
- Assemble the cakes: Take the chilled biscuit bases from the fridge. Carefully spoon the walnut-yogurt mixture into each cup, filling them right up to the top. Smooth the surface with a spoon.
- Chill the mini cakes: Place the filled cakes in the fridge and let them set for at least 3 hours. The longer they chill, the firmer the texture will be.
- Serve and garnish: Once the mini cakes are fully set, gently remove them from the muffin liners. Place them on serving plates. Garnish each cake with a halved walnut in the center and a drizzle of honey over the top.
