Instructions:

Roast the Lentils: Heat oil in a frying pan or wok over medium heat. Add mustard seeds and let them splutter for about 10 seconds.

Add Spices and Lentils: To the mustard seeds, add a pinch of asafoetida (hing), curry leaves, dry red chilies, chana dal, and urad dal. Stir and cook for another 15 seconds to release the flavors.

Add Turmeric and Horsegram: Stir in turmeric powder and the horsegram dal. Roast this mixture for 2-3 minutes until it is lightly golden and aromatic.

Add Coconut: Turn off the heat and add the freshly grated coconut. Stir well, allowing the heat to slightly soften the coconut.

Grind the Chutney: Let the mixture cool down. Once cooled, add a little water and grind it into a smooth paste. Adjust the consistency with water as required. Add salt to taste.
