Green Chillies 4, finely chopped
Coriander (Dhania) Leaves 2 tablespoons, finely chopped
Mint Leaves (Pudina) 5, finely chopped

For the Kebab:

Boneless Chicken 500 grams, cut into cubes
Chana Dal (Bengal Gram Dal) 1/2 cup, soaked for 30 minutes
Red Chilli Powder 1-1/2 teaspoon
Turmeric Powder (Haldi) 1 teaspoon
Ginger 1 tablespoon, grated
Garlic 1 tablespoon, minced
Coriander (Dhania) Leaves 2 tablespoons, finely chopped
Mint Leaves (Pudina) 3, chopped
Cardamom Pods (Elaichi) 2, whole
Cinnamon Stick (Dalchini) 1-inch stick
Cloves 4, whole
Black Peppercorns 4, whole
Ajwain (Carom Seeds) 1 teaspoon
Whole Egg 1, beaten
Salt To taste
Oil For shallow frying

Instructions:

  1. Cook the Chicken and Chana Dal:
    Begin by heating 1 to 2 cups of water in a pan. Add the boneless chicken pieces, soaked chana dal, crushed cardamom pods, cinnamon stick, cloves, black peppercorns, ajwain, salt, red chili powder, turmeric powder, grated ginger, and minced garlic. Cover the pan with a lid and cook until the chicken is fully cooked and the chana dal is soft. Ensure the water is almost evaporated, as excess water will affect the kebabs’ consistency. Once done, allow the mixture to cool.

  2. Grind the Mixture:
    Once the cooked chicken and chana dal have cooled, grind them together into a fine paste. Set the paste aside in a bowl.

  3. Prepare the Filling:
    In a separate bowl, prepare the filling by mixing the hung curd with finely chopped onions, green chilies, coriander powder, and salt. Combine these ingredients well.

  4. Shape the Kebabs:
    Pinch a lemon-sized ball of the kebab mixture and flatten it between your palms to form a disc. Add a small portion of the prepared filling into the center of the disc, then fold the edges to cover the filling. Flatten the mixture once again to shape it into a kebab and place it onto a tray lined with parchment paper.

  5. Cook the Kebabs:
    Heat a shallow frying pan or skillet over medium heat and add a little oil. Once the oil is hot, carefully place the kebabs in the pan. Fry the kebabs until they turn golden brown and crispy on both sides, ensuring they are cooked through. Flip them carefully to avoid breaking.

  6. Soak Excess Oil:
    After frying, place the kebabs on a kitchen napkin to soak up any excess oil.

  7. Serve:
