Coriander (Dhania) leaves 6 teaspoons, chopped

Instructions

  1. Prepare the Amla (Gooseberries):

    • Begin by placing the whole amla (gooseberries) in a pressure cooker. Add about 1/2 cup of water, turmeric powder, and a pinch of salt.
    • Close the lid of the pressure cooker and cook on medium heat for 5 to 6 whistles.
    • Once done, allow the pressure to release naturally. Afterward, carefully open the cooker, and set the amla aside.
  2. Cook the Toor Dal (Arhar Dal):

    • In a separate pressure cooker, cook the toor dal (arhar dal) with 1 cup of water for about 4 whistles.
    • Once the dal is cooked, allow the pressure to release naturally, then open the lid and mash the dal well to achieve a smooth consistency.
  3. Tempering (Tadka):

    • In a large saucepan, heat the ghee over medium heat. Once hot, add the mustard seeds and let them crackle.
    • Add a pinch of asafoetida (hing), followed by the finely chopped ginger, mashed garlic, and curry leaves. Sautรฉ for a few seconds until aromatic.
  4. Prepare the Rasam Base:

    • Add the slit green chili, tomato puree, tamarind water, the cooked amla, and the mashed toor dal to the pan.

    • Add sugar to balance the flavors and mix everything thoroughly.
  5. Simmer the Rasam:

    • Pour in about 1 cup of water and bring the rasam to a brisk boil. Let it boil for 4 to 5 minutes until the rasam froths slightly around the edges.
  6. Taste and Adjust:

    • Taste the rasam and adjust the seasoning (salt, sugar, or spices) as needed to suit your preference.
  7. Finishing Touches:

    • Turn off the heat, and garnish the rasam with freshly chopped coriander leaves.
