Spicy Chickpea Tacos with an Indian Twist

This gluten-free and vegetarian version of classic Mexican tacos is packed with flavors and a spicy Indian twist. Ingredients:

For Taco Shells and Toppings:

  • 4 hard taco shells
  • 1 tomato, finely chopped
  • 2 onions, finely chopped
  • 2 green chilies, finely chopped
  • Fresh coriander (dhania) leaves, finely chopped

For Filling:

  • 1 cup kabuli chana (white chickpeas), soaked overnight
  • 1 tsp red chili powder
  • 1 tsp turmeric powder (haldi)
  • 1 tsp coriander powder (dhania)
  • 1 tbsp chana masala powder
  • 1 tbsp ginger garlic paste
  • Salt, to taste
  • Oil, for cooking

Instructions:

  1. Boil the Chickpeas:

    • In a pressure cooker, add the soaked chickpeas and 1 cup of water. Cook on high for 8 whistles until the chickpeas are soft. Let the pressure release naturally.
    • Open the cooker, drain the excess water, and set the chickpeas aside.
  2. Cook the Spiced Chickpeas:

    • Heat oil in a pan or kadai on medium flame. Add half of the finely chopped onions and sauté until soft.
    • Add the ginger garlic paste and cook on low heat until fragrant.
    • Stir in the red chili powder, turmeric powder, and coriander powder. Mix well.
    • Add the cooked chickpeas to the pan, season with salt, and stir to combine.
    • Sprinkle in the chana masala powder and cook for an additional 5-7 minutes until the chickpeas are well-coated with the spices and slightly dry.
  3. Assemble the Tacos:

    • Heat the taco shells in the microwave.
    • Fill each taco shell with the spiced chickpea mixture.
    • Garnish with chopped onions, tomatoes, and fresh coriander leaves.
