Instructions

  1. Prepare the Beef: Heat a small amount of cooking oil in a pan. Add the minced beef and sauté until fully cooked. Set aside.

  2. Make the Spice Paste: Using a mortar and pestle or a food processor, grind the garlic, shallots, red chilies, bird’s eye chilies, and kencur into a smooth paste. Add salt and sugar to taste.

  3. Prepare the Tofu: Mash the soaked tofu until smooth. In a large bowl, combine the mashed tofu with the cooked minced beef and the spice paste. Mix well and add seasoning powder to enhance the flavor. Be sure to taste and adjust the seasoning as needed.

  4. Wrap in Banana Leaves: Place a tablespoon of the tofu mixture onto a piece of banana leaf. Roll the leaf tightly and secure the ends with toothpicks.

  5. Steam the Pepes: Arrange the wrapped tofu parcels in a steamer. Steam for about 30 minutes or until fully cooked.

  6. Serve: Once cooked, remove the pepes from the steamer and allow to cool slightly before serving. Pepes Tahu Daging Sapi is best enjoyed with steamed white rice and a side of sautéed spinach.

  • Substitution: The minced beef can be substituted with anchovies (teri nasi). If using anchovies, reduce the amount of salt to prevent the dish from becoming too salty.
