Ayam Kemangi: A Fragrant Indonesian Chicken Dish

Ingredients:

  • 5 candlenuts
  • 6 bird’s eye chilies (adjust to heat preference)

Instructions:

  1. Prepare the Spice Paste:

    • Begin by peeling and chopping the shallots, garlic, turmeric, ginger, and galangal. Blend or grind these ingredients into a smooth paste. For a more authentic flavor, grinding the spices using a traditional mortar and pestle is recommended, as it enhances the depth of flavor.
  2. Cook the Spice Paste:
