Indonesian Mackerel in Sweet Soy and Basil Oyster Sauce

Ingredients:

  • 6 mackerel fillets
  • 2 bunches of basil leaves
  • Spices:
    • 10 large red chilies
    • 5 bird’s eye chilies (red)
    • 8 shallots
    • 6 cloves of garlic
    • 1 medium-sized tomato
    • 1 lemongrass, bruised
    • 1 piece of galangal, bruised
    • 2 bay leaves
    • 2 kaffir lime leaves
    • Salt, sugar, broth seasoning (to taste)
    • Cooking oil, olive oil (if available)
    • 1 thinly sliced ​​onion (optional, can be skipped if unavailable)
    • Soy sauce, oyster sauce (to taste)

Instructions:

  1. Clean the mackerel thoroughly. If available, drizzle with lime juice to reduce fishy smell. Fry until cooked through, then drain excess oil.

  2. Grind the spices finely: chilies, shallots, garlic, and tomato.

  3. Sauté the ground spices and sliced onion (if using) until fragrant. Add bay leaves, kaffir lime leaves, lemongrass, and galangal.

  4. Pour in water. Once boiling, add sugar, salt, broth seasoning, soy sauce, oyster sauce, and olive oil (if using).

  5. Taste and adjust seasoning. Add the fried mackerel. Once the flavors are infused, add basil leaves and stir briefly.
