Pepes Tahu Kemangi Recipe
Ingredients:
- 10 small white tofu cubes
- 2 bunches of basil leaves
- 2 stalks of green onions, chopped
- 2 cm ginger
- Galangal, sliced thinly for wrapping
- Banana leaves for wrapping
For the Spice Paste:
- 10 red chilies
- 5 bird’s eye chilies
- 8 shallots
- 8 cloves garlic
- 6 candlenuts
- 2 cm ginger
- Salt, sugar, and seasoning to taste

Prepare the Tofu: Begin by mashing the tofu until smooth.

Mix the Spice Paste: In a blender or food processor, combine the red chilies, bird’s eye chilies, shallots, garlic, candlenuts, and ginger. Blend until a smooth paste forms. Season the paste with salt, sugar, and additional seasoning according to your taste preferences.

Combine Ingredients: Add the spice paste to the mashed tofu. Mix well to ensure the tofu is evenly coated with the paste. Adjust the seasoning as needed. Stir in the chopped green onions.

Prepare the Basil and Galangal: Wash the basil leaves thoroughly. Slice the galangal thinly.

Wrap the Tofu Mixture: Lay out a piece of banana leaf and place a portion of the tofu mixture onto the leaf. Top with a few basil leaves and slices of galangal. Fold the banana leaf over to enclose the tofu mixture securely. Repeat with the remaining tofu mixture.

Steam the Pepes: Prepare a steamer and bring the water to a boil. Arrange the wrapped tofu packets in the steamer basket. Steam for 30 minutes until cooked through.
