Pepes Tahu Kemangi is a quintessential Indonesian dish that beautifully combines the freshness of basil with the delicate texture of tofu. This recipe involves a traditional method of cooking, where tofu is seasoned with a blend of aromatic spices and herbs, wrapped in banana leaves, and steamed to perfection. Ingredients:

  • Tofu: 2 large blocks of white tofu
  • Fresh Basil Leaves (Daun Kemangi): 2 bunches
  • Banana Leaves: For wrapping

Spice Paste (Bumbu):

  • Shallots: 5
  • Garlic Cloves: 5
  • Red Chilies: 2
  • Candlenuts (Kemiri): 3
  • Coriander Seeds (Ketumbar): 2 teaspoons
  • Turmeric: 2 thumb-sized pieces
  • Ground Black Pepper: 1 teaspoon
  • Bay Leaves (Daun Salam): 8
  • Lemongrass (Daun Sereh): 2 stalks, cut into 4 cm pieces
  • Salt: To taste

Instructions:

  1. Prepare the Tofu:

    • Begin by mashing the tofu until it reaches a smooth consistency. Set aside.
  2. Make the Spice Paste:

    • Blend the shallots, garlic, red chilies, candlenuts, coriander seeds, turmeric, and salt until smooth. This mixture is the heart of your pepes, giving it rich and aromatic flavors.
  3. Prepare the Herbs:

    • Clean the basil leaves, bay leaves, and lemongrass. Slice the lemongrass into 4 cm long pieces.
  4. Combine Ingredients:

    • Mix the mashed tofu with the prepared spice paste. Add the basil leaves and combine thoroughly to ensure even distribution of the flavors.
  5. Wrap the Pepes:

    • Clean the banana leaves and cut them into large squares. Place a bay leaf on each square of banana leaf. Spoon a portion of the tofu mixture onto the bay leaf, then add a few pieces of lemongrass on top.
    • Fold the banana leaf to create a secure packet. You may use toothpicks or kitchen twine to secure the folds if necessary.
  6. Steam the Pepes:

    • Arrange the banana leaf packets in a steamer. Steam over medium heat for approximately 40 minutes. The pepes are done when the banana leaves turn a dull green and become wilted.
  7. Serve:

    • Carefully remove the pepes from the steamer. Unwrap and serve warm. Enjoy the fragrant and spicy flavors of this traditional Indonesian dish.
