Capcay Bakso and Beef Stew

Ingredients:

  • 50 grams beef
  • 6 meatballs (bakso)
  • Cabbage, chopped
  • Carrots, chopped
  • Potatoes, chopped
  • Chinese cabbage (sawi putih), chopped
  • Green mustard greens (sawi hijau), chopped
  • Cauliflower, chopped
  • 1 teaspoon sweet soy sauce (kecap manis)
  • 1 teaspoon chili sauce (Indofood)
  • Spring onions, chopped
  • Celery, chopped
  • 3 red bird’s eye chilies
  • 2 green bird’s eye chilies
  • 2 shallots
  • 1 tomato
  • For the Spice Paste:
    • 3 cloves garlic
    • Salt
    • Pepper

Instructions:

  1. Prepare the Beef: Begin by boiling the beef in water for about 15 minutes until it is fully cooked. Once tender, cut the beef into cubes and set aside.

  2. Prepare the Ingredients: While the beef is cooking, prepare all the vegetables. Slice the shallots, red and green bird’s eye chilies, spring onions, and celery. Cut the meatballs into thirds. For the spice paste, blend the garlic with salt and pepper until smooth.

  3. Sauté the Aromatics: Heat oil in a wok or large pan over medium heat. Add the sliced shallots and sauté until they become translucent. Next, add the prepared spice paste and cook until fragrant.

  4. Cook the Vegetables and Meatballs: Add the carrots, potatoes, and meatballs to the pan. Pour in a small amount of water and cook until the vegetables start to soften.

  5. Flavor the Dish: Stir in the sweet soy sauce and chili sauce. Adjust seasoning with a bit of flavor enhancer (optional) to taste. Incorporate the beef cubes, followed by the spring onions, celery, tomato, and both red and green bird’s eye chilies.

  6. Add the Greens: Toss in the chopped leafy greens and stir well. Cook until the greens are wilted and all the ingredients are well combined.

  7. Final Adjustments: Taste the dish and adjust seasoning as needed. Once all the ingredients are cooked and flavors melded together, remove from heat.

  8. Serve: Transfer the Capcay Bakso and Beef Stew to a serving dish. Enjoy this hearty and flavorful dish warm.
